Aperitif bites:
1 pot of Quebec duck foie gras
Its pure butter brioche (100g)



1st entry:
Cupid red soup with coconut milk and basil (500ml)




2nd entry:
Celery Remoulade salad with light mayonnaise in Dijon sauce (500g)



Main course :
2 lobster gratins like mac'n cheese gratiné. Lobster claw and lobster bisque with truffle. (2 x 500g)



Dessert :
Chocolate flowers (2 ramekins)



Mignardises:
 1 case of 4 fine chocolates

 1 surprise gift offered from the whole brigade

 2 printed menus as well as a sheet with preparation instructions

Lobster Cappuccino with Truffle Purée

Ingredients: Lobster, 18% Cream, Tomato paste, Brandy, Leeks, Onions, Celery, Garlic, Salt, Pepper.

Contains: shellfish, milk.

Serving Instructions: In a saucepan, bring the lobster bisque to a boil. Separately, in a mixing bowl, pour in the cream and whip into whipped cream. Do not season yet. In serving cups or bowls, add a scoop of the Truffle Purée. Season the Lobster Bisque to taste, then pour into serving cups or bowls. Add a dollop of whipped cream. Serve hot. Bon Appetit !

Can be stored in the refrigerator for up to 10 days. Do not freeze.

Risotto aux pétoncles princesses, sauce homardine

Duck Legs Confit with Fine Herbes

Ingredients: Duck legs, Duck fat, Fine Herbes (chervil, chive, parsley, tarragon), Salt, Pepper, Spices.

Serving Instructions: Preheat oven to 350°F. Empty contents of vacuum-sealed bag onto a baking tray and reheat for 10-15 minutes. Season to taste. Bon Appetit !

Truffle Potato Purée

Ingredients: Potatoes, Milk, Summer truffle, Mushrooms, Garlic, Water, Sunflower oil, Salt, Pepper.

Contains: milk.

Serving Instructions: Microwave Instructions: Empty ramekins into a microwave-safe bowl and reheat for 2 to 4 minutes. Oven Instructions: Preheat oven to 350°F. Place ramekins onto a baking tray and reheat for 5 to 8 minutes. Season to taste. Bon Appetit !
