Bearnaise Sauce Angus Prime Rib
Preparation time : 25 minutes

The market for 4 to 6 people

- 1/2 t. red wine vinegar
- 1 shallot, chopped
- 3 tsp. chopped tarragon table
- 5 egg yolks
- 3/4 t. butter
- Salt and pepper

Preparation :

1. In a saucepan, place the wine vinegar,
shallot and tarragon.
2. Let reduce to two thirds.
3. In a round metal bowl, place the egg yolks.
4. Place on a saucepan filled with boiling water
To get a double boiler.
5. Whisk, incorporating the butter piece by piece.
6. Wait for the sauce to be thickened before removing it from the bain-marie
7. Season.
